Last night we made Black Beans and Pork Chops along with some yellow rice. It was quick, tasty and cheap ringing in at about $7 to feed four! (We used great quality boneless butterfly pork chops instead of bone-in.) Next time, I think it would be a good idea to add a simple spice rub to the pork chops maybe with some cumin and chili powder to enhance the flavor of the pork and better tie it into the sauce.
