We ate dinner late. Lemon pepper chicken, this potato side dish and a vegetable side dish which included carrots and sugar snap peas.
The potatoes were super yummy and easy to make! This made about 3-4 servings:
RECIPE:
Preheat oven to 350 degrees
INGREDIENTS:
- 4 new potatoes (depending on size), cut into 1 inch chunks
- 1/2 medium white onion, diced
- 4 cloves of garlic, minced
- Dried thyme, oregano, salt and pepper to taste (about 1 tsp of all except pepper)
- Olive oil
ASSEMBLY:
1. Cut all the vegetables and place on a cookie sheet.
2. Drizzle with olive oil (1-2 TBSP)
3. Add herbs, salt and pepper to taste.
4. Mix well on the cookie sheet, spreading out evenly.
5. Cook about 30-40 minutes until potatoes are tender, tossing well every 15 minutes.

Even tho it may seem uninteresting, doesn’t mean you can’t make it interesting. I love the angle the DoF you chose, Looks tasty nice detail. You can count the chunks of onion. Good shot, thanks for sharing.
Yum! Too bad i’ve already made a pot pie, this looks delish!
I like this picture. Nicely composed, looks very tasty (which is what is wanted with food pictures), light is great, nice DOF. Nice job!!
Thanks everyone!
This was such a good and easy side dish. Inexpensive as well, especially if you’re like us and always have these ingredients on-hand.

Oh, my, this looks delicious! Thank you for linking up in our Star Recipes Collection!
I’ve only been with SITS for a few days, but the thing I have most enjoyed so far about it is finding so many multi-talented women there, you being the most recent since I’ve visited your blog and have seen your amazing photography work and know now that you also cook some yummy food, too!
I think I need to take a photography class. I love taking pictures and looking at other people’s, but mine definitely need a bit of fine tuning!

Thank you! My husband is more a cook than I am, but I realized I don’t do a lot of documenting our meals and I should start!
SITS is a *wonderful* community! I have a 2-week creative photography series they’ll be hosting in April you may want to be interested in. It won’t be highly technical, but may be a good precursor for a photography class.

Thanks! I will check it out and hopefully can participate. It’s hard for me right now to do much “extra” with two young children (including a 6-month-old)… may have to be something I pursue after the baby gets a little older!
